APRO-ZYME Colour Express has been especially developed for a rapid cold maceration and color extraction in red winemaking at low temperatures and pH. Ensures fast and effective must clarification.
It contains different activities: pectin-lyase (IUB 4.2.2.10) – undamental to break down the esterified pectins; hemicellulase – for the extraction of coloring agents; polygalacturonase, interacting with pectin-lyase, decomposes protopectin, performs quick clarifications of must and wines, and helps wine filterability; arabanase and pectinesterase – breaking down pectins.
The enzyme has been purified from cinnamyl esterase activity.
