APRO-ZYME EXTRA CLEAR has been developed especially for the treatment of difficult to clarify must.

The preparation has a wide range of activities: pectin lyase (IUB 4.2.2.10) – fundamental to break down the esterified pectin; β-glucanase – to prevent colloidal opacification; hemicellulase, cellulase – for the extraction of coloring agents; polygalacturonase – for splitting protopectin, perform a faster clarification of must and wines, improving their filterability; arabanase and pectinsterase – for the breakdown of pectin.

The enzyme has been purified from cinnamyl-esterase activity.
