APRO-ZYME MP WHITE has been especially developed for maceration of mash, and must clarification.

It contains different activities: pectin-lyase (IUB 4.2.2.10) – fundamental to break down the esterified pectins; polygalacturonase, interacting with pectin-lyase, decomposes protopectin, performs quick clarification of must and wines, and helps their filterability; arabanase and pectinesterase – breaking down of pectin.
The enzyme has been purified from cinnamyl-esterase activity.

APRO-ZYME MP WHITE – is a very active enzyme in maceration. Add
(after dilution at 5% in water) directly into the must stirring
